Homemade Italian Sausage

I made these late last night while I drank a few IPA beers by myself.

I used a big pork shoulder (after deboning it), half pack of smoked bacon, fennel seed, red pepper flakes, onion and garlic powder, salt and black pepper.

I fried a bite size portion to test and adjusted the seasoning. I then went to town and had fun making these rascals. Yet actually turned out to be pretty awesome!

I've got another pork shoulder in the fridge to do a load of Bratwurst.
