I made these late last night while I drank a few IPA beers by myself.
I used a big pork shoulder (after deboning it), half pack of smoked bacon, fennel seed, red pepper flakes, onion and garlic powder, salt and black pepper.
I fried a bite size portion to test and adjusted the seasoning. I then went to town and had fun making these rascals. Yet actually turned out to be pretty awesome!
I've got another pork shoulder in the fridge to do a load of Bratwurst.
Meatballs made with freshly ground pork, beef, & bacon, spinach, garlic, onion, jalapeño, sage, salt, black pepper, & nutmeg. With handmade and cut pasta.
These vegetable cakes were made by grating zucchini, onions, carrots, peppers, and mixing them with rice, chopped spinach, garlic, Parmesan, and topping with cheese and baking in large muffin pans.
I wanted a nice homemade sauce that will go nicely with some grilled chicken, pork, and beef so I decided to do a sweet and spicy pepper sauce. I used a lot of mini-sweet peppers, red bell pepper, a bunch of jalapeños (some with the seeds left in), a whole yellow onion, a lot of fresh garlic, a whole ginger root, brown sugar, apple cider vinegar, white vinegar, & salt. It's all processed finely and simmered for about an hour. Then I bottled most of it into Mason jars to keep in the fridge for a couple of months.
Grilled bacon-wrapped pork loin stuffed with goat cheese and fresh-minced jalapeños glazed with a honey/ponzu blend, bacon wrapped jalapeños stuffed with goat and cheddar cheese, and grilled onions and asparagus.
I sautéed a pan of chicken tenderloins in garlic, ground chipotle peppers, and fresh jalapeño. Then warmed refried beans with chicken stock to thin them. I stuffed these big burritos with the chicken, beans, yellow saffron rice, Mexican 4-cheese blend, and multiple hot sauces and topped with black olives and more cheese and more hot sauce.
I've been trying to make a decent pizza crust. I think I'm getting closer. I finally found some bread flour at Sam's club and that made a pretty big difference from the all-purpose flour.
